I want to upgrade my OS drive form 120gb ssd to a 500gb ssd. Is cloning a drive safe if it's SSD to SSD? Also, if i do the 'Clone' method will I have to somehow expand partitions so it recognizes I have more space? I am running win 7

Usually there is a data migration wizard, worst case scenario is you install again after formatting.

I've done cloning to migrate from HDD to SSD so SSD to SSD is the same process. Use whatever software you like (I like clonezilla since its free), copy the drive to the desired drive. I usually then boot to a USB install of Ubuntu and run gparted in the terminal to format the old drive so you don't have conflicting bootloaders from Windows and grow the new drive so it takes up however much space you want.
