I currently have a Gigabyte 277X-UD3H mobo and I'm wondering if swapping my mobo to any mini-itx board will greatly effect my performance or not? I am in college and moving around my full tower is getting old so if this won't effect performance that much I'm going to swap boards and cases. Also what's a good small case, mini-itx, that can fit my gtx780 in it.

If you don't overclock, then no, it won't affect performance at all. If do overclock, you probably won't be able to get as good of an OC from a mini ITX board.
